I can grow both `chevon' (goat) and beef for you. I accept deposits for the animals
between January and March and deliver them when they have grown enough which is
usually November/December for beef and earlier for chevon.

The non-refundable deposits are:
$400 for entire beef cow/bull or $200 for 1/2
$100 for chevon

Your deposit is then credited to your purchase at delivery. Deposits are used to
defray the cost of buying a calf if I don't have one, feeding it and caring for it until
processing. The deposit also encourages you to take the meat once it is ready as I do
not have that kind of freezer space! There are 3 common terms used in beef pricing:
On the hoof or live weight is the weight as the animal walks into the processing facility
Hanging weight is the weight after major cuts are made and is usually 75% of live weight
Cut weight is the weight all packaged and ready to take home and is usually 65% of hanging weight.


The meat prices are $3.60/lb hanging weight. I'll deliver your animal to the butcher for
you. The processor determines the hanging weight.

To ensure food safety, all meat products are frozen right after they are cut and
wrapped. They will need to stay frozen from the time you pick them up, through the
time you put them in your freezer, up until you thaw them for use. In general, 30 pounds
of meat takes up one cubic foot. Make sure that you have ample freezer space before
you get the meat home! Look at meat comparison chart.

Beef
The average full grown beef animal should weigh 1000+lbs on the hoof and dress out
to 350-500 lbs cut meat when all is said and done. Half a beef bull/cow should be
enough for the average family as it takes quite a bit of freezer space and comes all at
once. In general, a beef carcass divides up roughly into 15% to 25% steaks, 25% roasts,
25% to 35% ground beef. In order to keep beef costs down you will be responsible for
two processor fees. The first is $30 and the other is $0.38/lb of hanging weight. The
meat will be available for pick-up in Madisonville, TN. You can visit the farm while you
are out here :). So to do the math: if the animal weighs 800lb live, the hanging weight
will be 600 lb so the cost would be $1800 to the farm and $258 to the butcher making
the total $2058 for a final cost of about $5.25 lb for 390 lbs of meat. You may want to
take half for about $1100.

Chevon
Goat meat is the world's most commonly eaten meat. We can also expect only 50%
dressed cut weight from on hoof weight. Each goat should produce about 30-50 lbs of
meat. Consider ordering several. Once the butcher determines the hanging weight I'll
let you know how much you owe the farm and then the meat can be collected in
Madisonville. A $40 processing fee is due to the butcher at pick-up. Look at chevon
